Umami Salad

We just got back from our trip to Maui. This trip marked a few very special milestones in our lives! We celebrated our 10 year wedding anniversary and Aaron's 50 year old birthday. Maui is definitely one of our happy places!


Specifically for this trip, we went to a new restaurant: The Banyan Tree at the Ritz. Aaron loved it so much we went there twice! On the menu, they have something called "Umani Salad". I did not feel like I would enjoy the salad but once I tasted it, I was pleasantly surprised. Here's my attempt to recreate it at home:


Ingredients for salad dressing:

Lemon, honey, truffle oil, salt, and pepper


Salad ingredients:

Thinly shaved king trumpet mushroom

micro greens

Halved cherry tomatoes

Sunflower seeds

Shaved parmesan cheese


I would recommend you add half of the salad dressing into the mushroom and let it "marinade" for 10 minutes first, and then start to assemble everything for the final product. :)
