Thai Shrimp and Salmon Cake

Ingredients:


500g roughly diced salmon, you can also mix in some white fish e.g. snapper or cod

200g peeled and deveined shrimp

8 kiffer lime leaves, destemmed, finely chopped

1 Tsp Thai red curry paste

1 egg white

½ tsp sugar

2 tsp fish sauce

2 tsp sea salt

2 Tsp of corn flour

vegetable oil

diced cucumber, to serve with Thai sweet and sour sauce

fresh herbs, to serve e.g. basil, mint or coriander leaves


Steps:


Use food processor to grind up the fish, then pour it out and put in a mixing bowl. Chop up shrimp in little pieces (that gives it a better crunchy texture) and add it mixing bowl with fish. Then add all the rest of the ingredients and mix well.


Heat vegetable oil in pan, you can deep fry it or pan fry it. I typically pan fry it for 2-3 minutes per side. Enjoy!
