Roasted half chicken - ad hoc style

Ad Hoc is one of our favorite restaurants in Yountville, a must visit if you are in town. Chef Keller's brined chicken is one of his most famous trademarks. After tasting it, I tried to make it at home. The result was a very very flavorful and moist roasted chicken. Here are the steps:


Brining Liquid

1 1/4 lemon, halved or quartered 6 bay leaves flat-leaf parsley, 1 oz thyme, 4-5 sprigs 4 Tsp of sugar 4 cloves of garlic 1 Tsp black peppercorns 1/2 cup of kosher salt 8 cups of water


Boiled the liquid, let it cool down, then put two 1/2 chicken in for 4-6 hours. I find it to be too salty if you do more than 6 hours.


Roast chicken at 425 for 45-50 minutes. Make sure it reaches 165 degrees.
